Get in my Belly: Skinny Funfetti Cupcakes

Alright, so today I am bringing you my very first 'get in my belly' post. I am hoping  to feature a food post every wednesday on my blog. 

whats up first you ask....well that would be skinny funfetti cupcakes. I first came by the recipe for these amazeballs cupcakes on pinterest here. they are beyond super easy to make and only require 2 (thats right!) ingredients!


Step 1: preheat the oven to 350 degrees. while this is going on, add the funfetti mix along with 12 ounces of sprite zero into a mixing bowl.


step 2: now time for mixing! i like to first slowly (the sprite makes the batter kinda fizzy) start mixing the batter with just a spatula to get the two combined. then i switch over to a hand mixer to make sure to get all the lumps out of the batter.


step 3: the original receipe says that you can get 24 cupcakes out of the mix, however i never get that many. i usually end up with about 16 or so. i am also not a fan of the cupcake liners for these paticaluar cupcakes. i just spray my cupcake tin with non-stick spray instead.


step 4: allow the cupcakes to bake for about 18 minutes or so. then remove them from the oven and try  (this part is almost impossible for me) to let them cool for at least 20 minutes or so.


now its time to eat! to be honest i had one as soon as i took them out of the oven (told you it was almost impossible for me) and i might have also had 2 others after i let them cool....and may be eating another as i write this post--hey thats what skinny cupcakes where made for right?!

ohh...the original reciepe says that these delicious little guys are just a tiny  110 calories per cupcake, but that includes the frosting that you make to go along with it. i made the frosting the very first time i made these and i wasn't a fan, so i have left it off every other time since and dont feel like i'm missing out on anything. they are great just by themselves!
